Creamy Mango Chia Pudding (serves 2)
- 1 cup almond milk
- ¼ cup chia seeds
- 1 teaspoon agave nectar
- 2 tablespoons maple syrup
- ½ teaspoon ground ginger
- coconut flakes
- blueberries
In a jar or sealable container combine the almond milk, chia seeds, agave nectar, 1 tablespoon maple syrup, and ground ginger. Stir together until combined, cover with a lid, and refrigerate overnight.
The next morning place the peeled and cut up mango, plus 1 tablespoon maple syrup, in a food processor or blender and mix until creamy and smooth. Mix mango puree with chia pudding and place in two bowls. Top with a splash of almond milk, sprinkle with blueberries and coconut flakes, and enjoy!
