Apple + Avocado Salad
6 stalks curly kale, stems removed
1/2 avocado, diced
1 small green apple, diced
2 tablespoons sunflower seeds
1/4 cup onion, finely diced
Tahini-Honey Vinaigrette
1 heaping tablespoon tahini
1/2 tablespoon honey
1/2 lemon, juiced + zested
1 clove garlic, minced
1/2 teaspoon cayenne
sea salt + pepper
Whisk together all of the ingredients for the tahini dressing, and set aside while you put together the salad.
Chop the kale into bite size pieces and toss into a large bowl. Add all of the remaining ingredients, except for the avocado, then pour on the vinaigrette. Using your hands, massage the dressing into each and every bite.
Fold in the avocado pieces, then set in your fridge to allow the flavors to deepen. I love the way kale salads taste after sitting for a few hours, or even overnight. They make great make ahead meals!
