Green Superfood Tabbouleh with Fresh Figs
2 large heads organic broccoli
6 spring onions, finely sliced
1 bunch fresh parsley, chopped
1 avocado, chopped
Handful pumpkin seeds
Handful pistachio nuts, roughly chopped
200 grams baby spinach leaves
Juice from 3 limes or 2 lemons
1 tablespoon cold pressed olive oil or flaxseed oil
1 can white navy beans
1/2 cucumber sliced
2 figs sliced
1 handful goji berries
A generous amount of black pepper + a little sea salt
Finely chop raw broccoli with a large kitchen knife. You can alternatively use a food processor for quicker results.
In a large bowl, combine finely chopped raw broccoli with spring onion, parsley, mint, avocado, pumpkin seed, pistachio, spinach, lemon, olive oil, goji, navy beans, cucumber, figs, black pepper and a hint sea salt. Thoroughly mix to combine.
Taste and adjust any ingredients if necessary. Place into bowls and enjoy.
