Spiced Mediterranean Pepper Spread

  • 3 red bell peppers
  • ¼ cup sliced raw almonds
  • 1 clove garlic
  • ½ white onion (chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon crushed red pepper
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon fresh squeezed lemon juice

Turn broiler on in oven and roast peppers until they are blackened and roasted all over (may need to keep turning bell peppers throughout broiling time). Should take about 12 minutes. After they have roasted, place in a covered bowl and let steam for 10 minutes. Let them cool a bit then rub off the skin, cut in half, and take out all the inside seeds.

In a food processor blend together the almonds, garlic, onion, cumin, paprika, crushed red pepper, vinegar, and lemon juice. Blend until mixture is smooth, then, add in bell peppers. Blend until peppers are pureed and sauce has a creamier texture, and slowly add in olive oil.

Season to taste with salt and pepper, and for more spice put another pinch of red pepper flakes.
